The grapes were picked by hand at 3am on a cold fall night.We destemmed the fruit whole berries and introduced color extracting enzymes s02 and sacrificial tannins. There are notes of jalapeno and the funny thing is there is a jalapeno field adjacent to the vineyard.
Fantastic Ruby color opens with dark fruits, green pepper hints of baking spice and a touch of Habanero on the nose. the big tannins and balanced acidity make this an ideal food wine. The finish is long and dry. This is a serious wine that is a seductive tease.
