Fruit was picked from the south east corner of Paso Robles from the Dos Robles Vineyard.
The fruit was picked pre-dawn on a cool fall morning allowing the fruit to be transported while only 45 degrees. It arrived at he winery cool but very high sugar 27 brix. We irrigated to bring the brix to 25 . We added sulfites to suppress wild yeast and provide oxygen barrier until fermentation began.
This rich wine is full bodied with rich hues and great legs. Nose opens with exotic notes of blackberry, blueberry, black cherry and acai with hints of clove and anise. This wine loves food. Pairs will with grilled meats, rich sauces and savory spices.
